The OFAH record for Drum is 21.53 lbs set in 2008. Should be able to set a new record with the Drum they're catching now.

I talked to commercial guy and there's a limited market for Drum.

He says that the meat is quite firm. He fillets the fish and cuts the meat into strips. Boils the strips in salt water for a couple on minutes.

Drains and puts the meat in the fridge until cold. Serves with sea food sauce. Says it's very much like imitation crab.

Going to try it next time I haul in a smaller one.

I have eaten drum several times it tastes fine. I fillet it cut out the dark coloured meat along the lateral line, cut into chunks, bread it and deep fry it. Tastes great!!

I guess I've never had reason to even try it. I've usually got enough Perch and Pickerel to meet my needs. Maybe if I run into lean times I'll give it a try.
