Trolling around out from Wellington this morning in 100 fow, 75 down with an SD and fly, I hooked into this guy.
Fleas were bad and they plugged up the rods eyes while reeling him in. Makes it fun trying to hand bomb one in the last 20 yards [code][/code]when you're on your own. But once in the boat, I figured this was a good candidate to try out my new pellet grill for smoking/ grilling a fish on. Anyone have any good recipes for a pellet grill?

I marinade my fillets in maple syrup, olive oil, Chili flakes and soya sauce for 12-24hrs

Then on 180-225 for an hour and then up to 300 to finish it.

Thanks, that sounds good.
Wasn't sure about the temps and time for these grills. Did some venison and bear on them last weekend and that turned out pretty good, but wasn't sure about the salmon.

I mix up some brown sugar,kosher salt and a little garlic.
I dry brine for as long as I can take up the fridge space.
Then smoke for an hour or two basting with maple syrup smoking with alder if I can find it. Had to use apple chunks last week.
Haven’t had a complaint yet.

Looks delicious Charlie! I ended up marinating in maple syrup, peppercorn and sea salt for an hour, put it in for 30 minutes at 240 then for 5 minutes at 350. I used mesquite pellets and it turned out amazing.
So now i'm left with no choice. Only thing I can do now is go get another to try some different flavors.
