I recommend you just ask around to people you know that may hunt. If there's no specific mentoring program, current hunters are normally quite willing to take someone under their wing.
I'm in a similiar situation (though not in quinte area). My son got in to hunting so I've had to go out and get my license as well. As the result of just talking to local folks:
a) a local bowhunter found us a spot to bowhunt deer
b) my brother in law asked his neighbour, his neighbour is now taking my son out tomorrow for a deer drive - I expect he'll see his first deer down tomorrow. We don't have our gun licenses, but he'll experience the hunt as well as how to clean a deer.
c) our neighbour who hunts told us about a spot that does have a mentoring pheasant hunt. Free, they provide the dogs, guns and mentors, so he's going on that in a couple of weeks. The organizers mentioned that they're hoping to expand this hunt.
Again, just have to ask around - everyone Most hunters see this as a culture and heritage thing and are willing to go to great lengths to encourage young hunters, particularly those with little opportunity to do so on their own. The mentors you'll find are likely just 'regular' hunters.
