I would have no problem eating that fish. Fillet it, skin it out, cut out the lateral line and remove any dark meat from the outside of the fillet which is on all fish whether it be a sockeye salmon, a 1lb walleye as well as most bass. This dark fatty stuff gives a fish a muddy taste as well as is where most contaminants are collected and stored in its' body as far as I understand it.
Now if you are taking a whole 12lb walleye and stuffing it with a mixture of crabmeat, butter, mushrooms and seasoning... you are wasting a good stuffing.
To each their own but it is always about properly preparing your game for the table.
Just my opinion, but I think I'm right(LOL)
