Many people will filet a sheepshead and cut the filets into bite size pieces. Then they put them in boiling water for a couple of minutes, plunge the pieces into ICE water to stop the cooking and serve with shrimp cocktail sauce.

Why not skip the fish part and drink the cocktail sauce

I also know some people who have steamed them and found them OK.

Hope that helps

my wife caught a big one under the burlington bridge when we used to live in hamilton, I never tried it because I was afraid to eat anything around hamilton harbour, I heard they are pretty good, but some say they have way too many bones.

In Fisherman magazine published a recipe for sheephead chowder some time ago. It can probably be accessed on their website/ archives.
